Lentil Patties

Lentil Patty, Lentil Patties, Vegan Patties

One of our favorite vegan recipes!

Prep. Time: 15 minutes
Total Time: 35 minutes
Servings: 6 - 8

 

Ingredients:

  • 1 c cooked instant rice
  • 12 oz mushrooms
  • 1 c Quick-Cook Lentils
  • ¼ - ½ c hot water
  • ½ c instant oats
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp liquid smoke
  • oil for frying

 

Directions: 

  1. Cook rice according to directions on package.
  2. Sauté mushrooms for about 5 minutes, with a tiny pinch of salt. This brings out the moisture. The pan will fill with water, sauté on medium-high heat until the moisture evaporates.
  3. In a food processor or blender, add the Quick-Cook Lentils, instant oats, hot water, cooked rice, sautéed mushrooms, and seasonings.  Pulse together. Try not to blend it, or it will turn into a paste. Patty them out.
  4. Form mix into 6-8 patties. Let them stand for 15-20 minutes. Fry in oil over medium heat 5-7 minutes until browned on each side.
  5. Serve.
